Caramelized Onion Orzo

An easy recipe with loads of smokey, caramelized onions finished off with melted cheese and spinach.

Equipment

  • 1 stovetop shallow pan with lid

Ingredients
 

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1/2 cup diced white onion
  • 1 cup orzo
  • 1/2 tsp thyme (fresh or dried)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic (fresh chopped)
  • 1 cup half and half
  • 1 cup beef broth
  • 1.5 cups chopped spinach
  • 1/4 cup gruyere cheese (shredded)
  • 3 tbsp chopped bacon (or bacon crumbles)

Instructions
 

  • In a large pan on the stove top, melt butter and olive oil on medium heat. Add onions, and cook until golden brown (about 4-5 minutes).
  • Add orzo to onions, along with garlic, salt, pepper, and thyme. Stir until orzo is golden brown.
  • Reduce heat to low, and add in half and half, and beef broth. Cover pan with lid, and allow to simmer until liquid is fully absorbed by orzo, stirring often to prevent sticking to pan. Stir in chopped spinach once liquid is almost fully absorbed.
  • Remove from heat, top with cheese and bacon crumbles. Serve & enjoy!
