Cheesy Ranch Smashed Potatoes

  • 1 18x26 inch sheet pan
  • Parchment Paper

Ingredients
 

  • 20 baby potatoes
  • 3 tbsp ranch seasoning
  • 3 tbsp olive oil
  • 1/4 cup shredded cheddar cheese
  • 2 tbsp ranch dressing (for drizzle)

Instructions
 

  • Preheat oven to 400 degrees fahrenheit. Line a sheet pan with parchment paper, set aside. Wash potatoes until clean and no dirt remains.
  • Fill a large pot with water and 2 tsp of salt (be sure all potatoes are submerged). Boil potatoes until fork tender. Once tender, drain in a colander. Potatoes should dry quickly from the heat once drained.
  • On parchment paper, add potatoes along with olive oil and ranch seasoning. Toss until fully coated. Using a flat bottom cup, smash each potato. Top smashed potatoes with cheese. Bake for 20-25 minutes, or until golden brown.
  • Allow to slightly cool, serve, and enjoy.
