Preheat oven to 400 degrees fahrenheit. Line a sheet pan with parchment paper, set aside. Wash potatoes until clean and no dirt remains.
Fill a large pot with water and 2 tsp of salt (be sure all potatoes are submerged). Boil potatoes until fork tender. Once tender, drain in a colander. Potatoes should dry quickly from the heat once drained.
On parchment paper, add potatoes along with olive oil and ranch seasoning. Toss until fully coated. Using a flat bottom cup, smash each potato. Top smashed potatoes with cheese. Bake for 20-25 minutes, or until golden brown.
