Preheat oven to 425 degrees fahrenheit. Line a sheet pan with parchment paper (or foil sprayed with nonstick spray) and set aside.
In a small bowl, combine olive oil and seasonings. Stir to combine. Transfer chicken ad marinade to a large plastic bag. Seal & smush around until chicken is fully coated.
Remove chicken from bag, and wrap with bacon. Place chicken on parchment paper. Add drizzle of honey if desired, and bake.
Bake chicken for 20 minutes, or until internal temperature reaches at least 165 degrees fahrenheit.
