Bacon Wrapped Chicken Thighs

Bacon Wrapped Chicken Thighs are a weeknight favorite around here! We season chicken thighs with a little brown sugar and smoked paprika based seasoning, before wrapping them in delicious smokey bacon. The result is an easy, smokey sweet chicken we love!

Bacon Wrapped Chicken

You only need a few ingredients to go from none to done.

  • Chicken Thighs: Boneless and skinless.
  • Olive Oil: This helps the seasoning stick to the chicken.
  • Seasoning Mix: Smoked paprika, granulated onion, granulated garlic, brown sugar, salt, and pepper.
  • Bacon: I like to use thick cut, or applewood smoked.
  • Honey: Optional, but I like to add a little sweet to the bacon!

Wrapping Chicken in Bacon

Since this recipe works with raw chicken and bacon, I find it easier to have everything set up already. This is called mis en place in French cooking. A term that basically means, everything has a place! Mix the seasoning, have the olive oil available, sheet pan ready covered in parchment paper, and the chicken and bacon containers open. All of this is to prevent cross contamination, and a clean cooking surface. It really makes it so much easier on the cook!

Combine the olive oil with the seasoning, and coat the chicken in that mixture. I like to mix it and then pour it in a bag with the chicken thighs, and mush the bag around until they’re fully coated.

Next, take each chicken thigh, and wrap it in a piece of bacon in a spiral fashion.

Baking Chicken Thighs

Chicken thighs are one of my favorite cuts of chicken because it’s so forgiving. They’re higher in fat content than chicken breasts, and super versatile working well with most cooking methods.

Once the chicken thighs are prepped and ready to go, bake them at 425 degrees fahrenheit for about 20 minutes.

Once the chicken thighs are fully cooked (at least 165 degrees fahrenheit), allow them to rest for about 5 minutes before serving. This helps the juices settle into the meat, resulting in the best tasting chicken!

Ingredients
 

  • 8 boneless skinless chicken thighs
  • 8 pieces of bacon
  • 2 tbsp honey

Chicken Seasoning

  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 2 tsp smoked paprika
  • 1 tsp granulated garlic
  • 1 tsp granulated onion
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 425 degrees fahrenheit. Line a sheet pan with parchment paper (or foil sprayed with nonstick spray) and set aside.
  • In a small bowl, combine olive oil and seasonings. Stir to combine. Transfer chicken ad marinade to a large plastic bag. Seal & smush around until chicken is fully coated.
  • Remove chicken from bag, and wrap with bacon. Place chicken on parchment paper. Add drizzle of honey if desired, and bake.
  • Bake chicken for 20 minutes, or until internal temperature reaches at least 165 degrees fahrenheit.
