Blueberry Biscuits

A simple recipe for an easy not so sweet treat that is perfect for breakfast, brunches, or side dishes.

Ingredients
 

  • 2.5 cups all purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup cubed cold butter (equivalent to 1 stick)
  • 1 egg
  • 3/4 cup buttermilk
  • 1 cup blueberries

Egg Wash

  • 1 egg yolk
  • 1 tbsp milk
  • 1/2 tsp vanilla extract

Glaze

  • 1 cup powdered sugar
  • 2 tsp milk
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 400 degrees fahrenheit. Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, whisk together dry ingredients (flour, sugar, baking powder, baking soda). Add cold cubed butter, and using either a dough blender or clean hands, incorporate cold butter into flour mixture until a sand like consistency forms. This will take 2-3 minutes.
  • In a separate bowl, whisk together buttermilk, egg, and vanilla.
  • Fold wet ingredient mixture into flour/butter mixture and fold until no large lumps remain.
  • Gently fold in blueberries.
  • Using a 2 tbsp cookie scoop, scoop rough heaps onto parchment lined baking sheet. Set aside and prepare egg wash, mixing ingredients in a small bowl until well combined.
  • Using a pasty brush, brush egg wash onto biscuits. Bake biscuits for 12-15 minutes, or until golden brown.
  • While biscuits are baking, prepare glaze. Mix glaze ingredients in a small bowl until no lumps remain.
  • Once biscuits have fully cooled, use a fork to drizzle glaze. Serve and enjoy!
