Melt In Your Mouth Blueberry Biscuits

These Blueberry Biscuits are a cross between cake, cookies and biscuits and the results are amazing! Blueberry Biscuits are an easy recipe perfect for blueberry season. They’re quick to make, fast to bake, and yield an impressive not-to-sweet treat your guests will swoon over. Every time I make these they don’t last long!
Blueberry Biscuit Recipe
I wanted to make my son a snack that was something he’d like, but not overly sweet. My go to is usually scones but I wanted to try something a little different. I used a traditional biscuit recipe, but added fresh blueberries and a little glaze on top for a touch of sweetness.
Blueberry Biscuits make for a delicious breakfast or brunch snack. My son specifically loves them for after school! The kid is starving after preschool and will down 2-3 of these with a big glass of milk!

Ingredients for Blueberry Biscuits
This recipe uses staple pantry ingredients. The one thing that is super important is using cold butter! The cold butter creates a flaky pastry dough and the cold butter also makes for little pockets of fat, creating tender, flakey. biscuits!
- Flour
- Baking Soda
- Baking Powder
- Sugar
- Butter
- Egg
- Blueberries: You can substitute raspberries, or even strawberries. If substituting strawberries,
- Egg Wash: Just a little mixture of egg yolk, milk and vanilla makes for a nice shiny coating.


Cold Butter is the Key to Perfect Biscuits
To make the biscuit dough, you must use cold butter. Cold butter makes for little pockets of fat. You can use a dough cutter to help incorporate the butter into the flour, but I just use clean hands. When you mix the dry ingredients with the butter, the goal is to get a crumbly, sand like texture. Then, fold in the wet ingredients. Finally, fold in the blueberries!
Be cautious not to overmix, which along with cold butter, is the key to tender, flakey biscuits.

The Best Tasting Breakfast Biscuits
I use a 2 tbsp cookie scoop to scoop the biscuits to keep the consistent. Next, we keep them shiny and golden by brushing an egg wash on them. I like to include a little vanilla extract in my egg wash, it gives a nice little bit of extra sweetness. The biscuits bake up pretty quickly, about 15 minutes is all it takes. While they bake, I like to make a simple glaze to dress them up. It’s just powdered sugar, milk, and vanilla.
Pro Tip: If you use a lighter sheet pan versus a darker one, it may take an extra couple minutes to achieve that golden brown. You can read all about pan variations here. It really does make a difference!

Once the biscuits are golden brown, remove them from the oven. Finally, allow the biscuits to cool for about 10-15 minutes before adding the glaze.

Once they’re done baking, I like to cool these on a wire rack. When they’re cooled, transfer them to a plate and cover them with plastic wrap. Next, I like to poke a few holes in plastic wrap when I store them to let them breathe a little without getting stale.

Blueberry Biscuits
Ingredients
- 2.5 cups all purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 cup cubed cold butter (equivalent to 1 stick)
- 1 egg
- 3/4 cup buttermilk
- 1 cup blueberries
Egg Wash
- 1 egg yolk
- 1 tbsp milk
- 1/2 tsp vanilla extract
Glaze
- 1 cup powdered sugar
- 2 tsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 400 degrees fahrenheit. Line a large baking sheet with parchment paper and set aside.
- In a large bowl, whisk together dry ingredients (flour, sugar, baking powder, baking soda). Add cold cubed butter, and using either a dough blender or clean hands, incorporate cold butter into flour mixture until a sand like consistency forms. This will take 2-3 minutes.
- In a separate bowl, whisk together buttermilk, egg, and vanilla.
- Fold wet ingredient mixture into flour/butter mixture and fold until no large lumps remain.
- Gently fold in blueberries.
- Using a 2 tbsp cookie scoop, scoop rough heaps onto parchment lined baking sheet. Set aside and prepare egg wash, mixing ingredients in a small bowl until well combined.
- Using a pasty brush, brush egg wash onto biscuits. Bake biscuits for 12-15 minutes, or until golden brown.
- While biscuits are baking, prepare glaze. Mix glaze ingredients in a small bowl until no lumps remain.
- Once biscuits have fully cooled, use a fork to drizzle glaze. Serve and enjoy!
