Prep the dates: Slice them in half across the top. If you purchased pitted dates, remove the pit.
Prepare a sheet pan with parchment paper, followed by a wire rack on top. Set aside.
Chop peanuts for garnish; set aside.
Prepare the peanut butter: Add peanut butter to a sandwich sized plastic bag. Set aside.
Melt chocolate: Combine coconut oil (or butter) with chocolate and melt in 20 second increments in the microwave in a microwave safe container. Stir, then microwave, until chocolate is fully melted. Set aside.
Using scissors, cut one bottom tip of the peanut butter filled plastic bag (like a makeshift piping bag). Fill the dates with peanut butter.
Using a fork, dip the date in chocolate and place on wire rack. Top with chopped peanuts. Allow to dry in refrigerator before serving.
