Date Snickers

A delicious homemade treat that tastes like a snickers bar, without the processed ingredients.

Ingredients
 

  • 16 dates (Zahidi or Medjool are our favorite)
  • 1 cup peanut butter
  • 1.5 cups dark chocolate
  • 1.5 tsp coconut oil
  • 3 tbsp chopped peanuts (for garnish)

Instructions
 

  • Prep the dates: Slice them in half across the top. If you purchased pitted dates, remove the pit.
  • Prepare a sheet pan with parchment paper, followed by a wire rack on top. Set aside. 
  • Chop peanuts for garnish; set aside. 
  • Prepare the peanut butter: Add peanut butter to a sandwich sized plastic bag. Set aside. 
  • Melt chocolate: Combine coconut oil (or butter) with chocolate and melt in 20 second increments in the microwave in a microwave safe container. Stir, then microwave, until chocolate is fully melted. Set aside. 
  • Using scissors, cut one bottom tip of the peanut butter filled plastic bag (like a makeshift piping bag). Fill the dates with peanut butter. 
  • Using a fork, dip the date in chocolate and place on wire rack. Top with chopped peanuts. Allow to dry in refrigerator before serving.
