Date Snickers

We love this recipe for an easy and healthy treat! Get all the flavor of a snickers bar but with none of the processed ingredients. Delicious dates are filled with peanut butter, then enrobed in dark chocolate topped with crunchy peanuts.

Ingredients & Tools Needed for This Recipe

Ingredients:

  • Dates: You can purchase dates at most grocery stores, we got ours from Sprouts.
  • Fun fact! Did you know we live in the date capital of the world? We live about a mile from Shields Date Garden in Indio, California!
  • Peanut Butter: We opted to make our own but store bought works just as well. You could use any type of nut butter you like best.
  • Dark Chocolate: For the best taste, we love Guittard but you can use any type of dark chocolate.
  • Coconut Oil: This helps the chocolate melt to a perfect smooth sheen. Trader Joes sells it for inexpensive. You could also use butter.
  • Chopped Peanuts for Topping: Just a little bit for crunch.

Tools:

  • Wire Rack/Sheet Pan: To allow the truffles to dry on.
  • Parchment Paper: For easy cleanup
  • Knife: To slice the dates in half.
  • Ziplock Bag: To pipe the peanut butter with.
  • Microwave Safe Container: For melting the chocolate. You can do this on the stop top in a double boiler if you chose, but for time sake we prefer the microwave method.

How to Make Snicker Date Truffles

  • Prep the dates: Slice them in half across the top. If you purchased pitted dates, remove the pit.
  • Prepare a sheet pan with parchment paper, followed by a wire rack on top. Set aside.
  • Chop peanuts for garnish; set aside.
  • Prepare the peanut butter: Add peanut butter to a plastic bag. Set aside.
  • Melt chocolate: Combine coconut oil (or butter) with chocolate and melt in 20 second increments in the microwave in a microwave safe container. Stir, then microwave, until chocolate is fully melted. Set aside.
  • Using scissors, cut one bottom tip of the peanut butter filled plastic bag (like a makeshift piping bag, see photo below). Fill the date with peanut butter.
  • Using a fork, dip the date in chocolate and place on wire rack. Top with chopped peanuts. Allow to dry in refrigerator before serving.

Tips for Making Peanut Butter Date Truffles

  • Mis en Place! This is the French concept of ‘everything has a place’ when in the kitchen. Prep as you go to ensure a smooth process.
  • Don’t skip on topping them with crunchy peanuts! Besides the textural appeal it gives them, it also makes them pretty. : )
  • If you like a salty sweet flavor, add some sea salt to top them with (with or without peanuts!).

How to Store Date Truffles

  • Store them in an airtight container in the refrigerator for up to 5 days.

  • 1 cup peanut butter
  • 1.5 cups dark chocolate
  • 1.5 tsp coconut oil
  • 3 tbsp chopped peanuts (for garnish)
