Easy Focaccia Muffins

A simple recipe using frozen dough and olive oil with herbs and seasoning.

Equipment

  • 1 unlined muffin pan

Ingredients
 

  • 12 pieces Frozen Roll Dough
  • 3/4 cup olive oil (12 tablespoons total)
  • salt
  • pepper
  • granulated garlic
  • fresh herbs

Instructions
 

  • Prepare an unlined muffin tin with 1/2 tbsp of olive oil for each muffin. Add frozen dough to each tin.
    Note: You can make 1, or 12 muffins. Each muffin tin will get 1 tbsp total of olive oil (1/2 tbsp to thaw/rise in, 1/2 tbsp to top).
  • Allow to thaw and rise on the counter. Once thawed and risen, add 1/2 tbsp additional olive oil on top of each muffin, and push down with fingers.
  • Preheat oven to 350 degrees fahrenheit.
  • Allow to rise again for 10 minutes before being. Season as desired (see notes). Bake for roughly 12-15 minutes or until golden brown. Serve & enjoy!

Notes

  • Lemon Rosemary: My favorite! Salt, pepper, granulated garlic, lemon zest, red onion, fresh rosemary. Makes your house smell divine!
  • Pizza: Marinara, fresh or shredded mozzarella, little bit of oregano. Top with fresh basil before serving.
  • Spicy: Salt, pepper, granulated garlic, red chili flakes, diced jalapeño. Drizzle with hot honey before serving.
  • Garden Herb: Salt, pepper, fresh chopped chives, fresh chopped dill, fresh chopped parsley. When using garden herbs, I recommend slightly pushing them into the dough to prevent burning.
