Easy Focaccia Muffins

These Easy Focaccia Muffins use premade frozen dough! You can choose whatever herbs and seasonings you like. We’ll show you 2 varieties here (lemon rosemary and pizza) and also give you ideas for more.

Using Frozen Dough for Focaccia Bread

I’ve been using Rhodes dinner roll dough forever. I keep a bag of it in my freezer and I’ve made a few little snacks for my son, rolls to go with dinner, and most recently tried cinnamon rolls!

There are other brands you could try but so far Rhodes is the only one I’ve used and can vouch for! Not sponsored, just a product I like to use.

Making Focaccia Muffins

  • Add olive oil to an unlined muffin pan.
  • Add frozen Rhodes roll (you can make 2 or 12, up to you!). Allow to thaw and rise on the counter.
  • Once thawed and risen (see above photo), add more olive oil, and push down with fingers. Allow to rise again for 10 minutes.
  • Season as desired (see below for ideas!).
  • Bake for roughly 12-15 minutes at 350 degrees fahrenheit or until golden brown.

Seasoning & Herb Blends for Focaccia Muffins

Pro Tip: When using delicate herbs (dill, fresh thyme, etc), I recommend slightly pushing them into the dough to prevent burning.

  • Lemon Rosemary (pictured): My favorite! Salt, pepper, granulated garlic, lemon zest, red onion, fresh rosemary. Makes your house smell divine!
  • Pizza (pictured): Marinara, fresh or shredded mozzarella, little bit of oregano. Top with fresh basil before serving.
  • Spicy: Salt, pepper, granulated garlic, red chili flakes, diced jalapeño. Drizzle with hot honey before serving.
  • Garden Herb: Salt, pepper, fresh chopped chives, fresh chopped dill, fresh chopped parsley.

Tips for Perfect Focaccia Muffins

  • Let them rise! Take time to let the rise properly, the focaccia won’t be light and fluffy.
  • Don’t be scared of olive oil. It helps give that crusty exterior, and leaves a fluffy interior!
  • Each muffin uses a total of 1 tbsp of olive oil. Use this tip to make as many, or as few as you like. 1/2 tablespoon of olive oil to rise in, 1/2 tablespoon of oil oil on top of the muffin.

Storing Focaccia Muffins

These muffins are best served fresh. Part of why I love this recipe is because you can make as few, or as many as you like. I’ll be honest, they don’t keep for very long on the counter, only a day or two. If you want to store them, wrap individually in plastic wrap for up to 2 days.

Make too many? Use any leftover muffins to make croutons!

Easy Focaccia Muffins

A simple recipe using frozen dough and olive oil with herbs and seasoning.

Equipment

  • 1 unlined muffin pan

Ingredients
 

  • 12 pieces Frozen Roll Dough
  • 3/4 cup olive oil (12 tablespoons total)
  • salt
  • pepper
  • granulated garlic
  • fresh herbs

Instructions
 

  • Prepare an unlined muffin tin with 1/2 tbsp of olive oil for each muffin. Add frozen dough to each tin.
    Note: You can make 1, or 12 muffins. Each muffin tin will get 1 tbsp total of olive oil (1/2 tbsp to thaw/rise in, 1/2 tbsp to top).
  • Allow to thaw and rise on the counter. Once thawed and risen, add 1/2 tbsp additional olive oil on top of each muffin, and push down with fingers.
  • Preheat oven to 350 degrees fahrenheit.
  • Allow to rise again for 10 minutes before being. Season as desired (see notes). Bake for roughly 12-15 minutes or until golden brown. Serve & enjoy!
