Sun-Dried Tomato Pasta Salad

An easy pasta salad recipe with a homemade sun-dried tomato vinaigrette.

Ingredients
 

  • 2 cups cooked orzo (rinsed and dried)
  • 2 cups mixed greens
  • 1 cup cherry tomatoes (halved)
  • 1 cup shredded mozzarella
  • 1 can cannellini beans (rinsed, drained and dried)

Sun-dried Tomato Dressing

  • 1/4 cup sun-dried tomatoes (about 6 sun-dried tomatoes)
  • 1/4 cup oil (oil from sun-dried tomatoes works best)
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • 2 tsp dijon mustard
  • 1/2 cup water
  • 1/2 tsp granulated garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Make dressing. Combine dressing ingredients into a blender (or use an immersion blender) and pulse until smooth. Set aside.
  • In a large bowl, combine all ingredients. Be sure orzo and beans are rinsed and patted dry.
  • Drizzle about 1/2 cup of vinaigrette over the orzo and veggie mixture. Toss to combine. Serve and enjoy!
