Sun-dried Tomato Salad Dressing

1/4 cup sun-dried tomatoes 1/4 cup oil (from the sun-dried tomato jar, or plain olive oil works as well) 1/4 cup apple cider vinegar 1 tbsp honey 2 tsp dijon mustard 1/2 cup water 1/2 tsp granulated garlic 1/4 tsp salt 1/4 tsp black pepper
Combine ingredients into a blender.
Pulse until dressing is smooth.
If needed, add 1 tbsp of water at a time.
Store in a lidded jar for up to to 5 days in the refrigerator.
