Sun-dried Tomato Salad Dressing

This easy Sun-dried Tomato Salad Dressing recipe only takes a few minutes and yields the most flavorful salad dressing with a beautiful color. We use sun-dried tomatoes packed in olive oil, along with the olive oil from the jar to give the most sun-dried tomato flavor. This dressing doubles as a dip, and is great on chicken, fish or pork. I’ve also used it on crudite platters.

Sun-dried Tomato Salad Dressing Recipe

This recipe is so easy. It does require a blender, or you can use an immersion blender. This dressing has a rich flavor, and because the flavor is so bold, it has so many different uses. You can serve it with chicken, salad, fish, or pork. You can also use it as a marinade, or a side dip for sandwiches.

I serve this as the dressing on my sun-dried tomato pasta salad and my family loves it! This actually works really well over warm pasta, too.

Ingredients for Salad Dressing with Sun-dried Tomatoes

I buy my sun-dried tomatoes at Trader Joes. They come packed in olive oil which I like using for this recipe instead of regular olive oil because it hols so much additional flavor of the tomatoes. Trader Joes has a pretty reasonable price point for sun-dried tomatoes, this jar was around $2.99 here in Southern California.

If you want to try to dry your own tomatoes, you certainly can.

Ingredients:

  • Sun-dried tomatoes
  • Oil (I use it straight from the jar!)
  • Apple cider vinegar
  • Honey
  • Dijon
  • Water
  • Salt
  • Pepper
  • Granulated Garlic

Variation ideas: You can add Feta cheese to the dressing for a nice added tang. If you want it spicy, add some jalapeño, or cayenne pepper.

Dressings are an easy ‘taste as you go’ recipe, just use a light hand so you don’t overdo. You can always add too, but you can’t take ingredients away once it’s mixed!

Serving & Storing Homemade Dressing

I like to transfer my homemade salad dressing to mason jars. I usually just keep a bunch in my house and I use them for all kinds of purposes. Flower vases, snacks, my son uses them for bugs, we are pretty crafty around here.

This dressing will last for up to 5 days in the refrigerator in a lidded container. Sometimes the oils can separate, just give it a good stir or shake to remix it.

Ingredients
 

  • 1/4 cup sun-dried tomatoes
  • 1/4 cup oil (from the sun-dried tomato jar, or plain olive oil works as well)
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • 2 tsp dijon mustard
  • 1/2 cup water
  • 1/2 tsp granulated garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Combine ingredients into a blender.
  • Pulse until dressing is smooth.
  • If needed, add 1 tbsp of water at a time.
  • Store in a lidded jar for up to to 5 days in the refrigerator.
