Feta Cheese & Lemon Mixed Green Salad

A fresh and flavorful mixed green salad is a must for any home chef. This recipe is perfect year round. Our easy mixed green salad features delicate mixed greens, red onions, feta cheese and chives all tossed in a sweet and tangy honey lemon vinaigrette.

Everybody needs to know how to make a mixed green salad. It works with any main course; soup, chicken, steak, burgers, lasagna, you name it…a green salad goes with it.

Mixed Greens: What’s in them? Premixed vs. Homemade.

Mixed greens can be pre bagged, or you can create your own blend. I’ve gone both ways; sometimes I make my own, other times I purchase a pre made mix. I do like to make sure if I purchase packaged mixed greens that they are pre-washed. If you want to create your own, here’s a guide of what to use.

  • Choose a base for your mixed greens. I like spinach, or butter lettuce. If I’m using butter lettuce, I like to rip and tear it versus cut it. It can be rather delicate.
  • Red Leaf Lettuce: This adds a nice color to the mixture.
  • Arugula: The peppery taste really compliments a good vinaigrette!
  • Swiss Chard: Great anti inflammatory properties.
  • Romaine: I like to include romaine for its crunch.

Mixed Green Salad Topping

For this mixed green salad, I find simple is best. I don’t like to overcomplicate it with loads of vegetables and toppings. The star of the show is the flavor of the delicate mixed greens, and the dressing. A little feta cheese and thin sliced red onion is all this salad needs. If you do feel it needs a little bit of added texture, I would suggest pepitas, or walnuts.

  • Salad Tongs: Growing up, we had salad with dinner every night. We did not use tongs, just our hands, and it drove my husband crazy. Don’t be like us, use tongs.
  • Dressing Container: This works great to store homemade salad dressing in.
  • Salad Bowls: Technically, these are pasta bowls, but I have them and use them often for salads.
