Bacon Wrapped Carrots
This is the perfect side dish for any season, but especially the holidays! Bacon Wrapped Carrots are delicious and infused with fragrant thyme and sweet honey. An easy fast recipe your guests will go crazy for!
Carrot Bacon Recipe
I made this recipe after making bacon wrapped dates. I had bacon, and I had carrots, and behold- bacon wrapped carrots were born. I was shocked how easy these were and how good they tasted! I am normally not a big bacon lover but this is a restaurant quality recipe.
I bought baby carrots with the stem on at Trader Joes. They’re pre peeled and pre washed which makes it pretty easy on the cook. They come 3 colors to a package (orange, yellow and purple) however do not love the look of purple carrots. I just used the orange and yellow ones. You can do as you please though! Purple carrots just don’t look very great in pictures. : )
Roasting Bacon Wrapped Carrots
The fat from the bacon helps the carrots roast in the oven, so there are only a few easy steps here.
- Place the carrots on a parchment paper lined sheet pan, and toss them with olive oil, salt, granulated garlic, and pepper.
- Idea: If you like spicy, add in some red chili flakes too!
Wrapping Carrots in Bacon
Because we used baby carrots, they are not as long as traditional carrots, so I chopped the bacon in half so the size matched. This left me with a piece of bacon that is about 4-5 inches long, perfect for these smaller carrots.
Wrap the bacon over the carrot, and place it back on the sheet pan.
Seasoning Bacon Roasted Carrots
Once the carrots are back on the sheet pan, drizzle them with honey, salt, pepper, and fresh thyme. The fresh thyme really is the icing on the cake (er, carrot)!
- You can use hot honey, add chili flakes, rosemary, tarragon, the options to make this your own are really endless.
- You could eve sprinkle the bacon with brown sugar if you liked more sweetness.
- If you like a smokey flavor, consider sprinkling the bacon with smoked paprika.
Roasting the Carrots
Bake the carrots for about 15-20 minutes at 400 degrees fahrenheit, or until the bacon is crispy and the carrots are fork tender. The fat from the bacon really helps these roast quickly. Here’s a guide on when to know the bacon is fully cooked.
Remember, the bigger the carrot the longer it needs to roast!
When they’re done, let them cool for a few minutes before transferring them to a serving dish.

Bacon Wrapped Carrots
Ingredients
- 12 4-7" carrots (Washed and peeled with stem on for presentation. Trader Joe's brand come pre washed and pre peeled.)
- 12 pieces bacon (equal in length to carrot, cut if necessary)
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp granulated garlic
- 1 tbsp fresh thyme leaves
- 2 tbsp honey
Instructions
- Preheat oven to 400 degrees fahrenheit. Line a sheet pan with parchment paper. Set aside.
- Add carrots to sheet pan and toss with olive oil, salt, pepper and granulated garlic. Toss to combine until they all have a shiny coating of olive oil.
- Wrap each carrot in a bacon spiral. Place back onto sheet pan.
- Drizzle bacon wrapped carrots with honey, and sprinkle of additional salt and pepper, followed by fresh thyme.
- Bake for about 15-20 minutes, or until carrots are fork tender and bacon is crispy. Allow to slightly cool before handling & serving. Enjoy!
