Lemon Potato Salad with Feta and Chives

Spring and Summer are prime time for potato salads and this lighter version with no mayonnaise is fresh and delicious! Tender potatoes are dressed in a lemon honey vinaigrette and the addition of salty feta cheese, tangy red onions and topped with chives. You’ll get asked for the recipe when you serve this one!

No Mayonnaise Potato Salad Recipe

This recipe is super simple to make. Traditional potato salads can be heavy, but this lemon version is so light and fresh. What really makes it stand out is the Lemon Honey Vinaigrette! Way healthier than mayonnaise. This is one of those recipes where it doesn’t need a lot extra to make it shine. Simple, fresh flavors really come together.

Ingredients Used for Lemon Potato Salad

  • Potatoes: Baby potatoes, cut into the same size (this helps them all cook at the same rate).
  • Red Onion: Thin sliced.
  • Feta Cheese: I used pre crumbled but if you want larger chunks, buy a block and cut to your liking.
  • Chives: I love the flavor of chives and also the color they give this salad. If you prefer something more mild, parsley or arugula would great.
  • Lemon Honey Vinaigrette: Super simple easy homemade dressing.

Variations: What else can you add to no mayo potato salad?

The simple flavors of this easy lemon potato salad are what shine, however it does lend these simple flavors well if you want to add more vegetables or protein. Here’s a few suggestions!

  • Zucchini: Marinated and grilled zucchini would be great with this.
  • Picked Red Onions: Try this for added flavor.
  • Grilled Shrimp for added protein. Either top the potato salad or add the shrimp directly to it.
  • Add fresh dill for added Greek flavor.
  • Chickpeas for extra protein lend their flavor well to this potato salad!
  • Craving somewhere between traditional potato salad, and this lightened lemon version? Add 1/2 cup of Greek yogurt to it for a creamy finish.

Storing & Serving Potato Salad

  • This recipe is best served chilled. It’s also best dressed chilled so the feta cheese does not melt when you’re making it.
  • Store this potato salad in a container with a lid in the refrigerator. It will keep for up to 4 days.
  • If you want to make this ahead of time, I suggest redressing it if the potatoes dry out a little. They can act as a sponge and sometimes soak up the dressing. Simple redress with 2 tbsp of dressing (add more if needed)

Ingredients
 

  • 4 cups baby potatoes (cut into 1 inch pieces)
  • 3/4 cup red onion (thin sliced)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped chives

Lemon Vinaigrette

Instructions
 

  • Cut potatoes into 1 inch pieces and place into pot of salted water. Turn heat to medium high and bring to a boil. Strain potatoes once fork tender, and rinse under cool water.
  • Once cooled, dry potatoes on a paper towel and place into a medium sized mixing bowl.
  • Add feta cheese, chives, and red onion to potatoes .
  • Drizzle salad with lemon vinaigrette and toss to combine.
  • Chill for 30 minutes before serving.
