Lemon Potato Salad with Feta and Chives
Ingredients
- 4 cups baby potatoes (cut into 1 inch pieces)
- 3/4 cup red onion (thin sliced)
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped chives
Lemon Vinaigrette
- 1/2 cup lemon honey vinaigrette (recipe here)
Instructions
- Cut potatoes into 1 inch pieces and place into pot of salted water. Turn heat to medium high and bring to a boil. Strain potatoes once fork tender, and rinse under cool water.
- Once cooled, dry potatoes on a paper towel and place into a medium sized mixing bowl.
- Add feta cheese, chives, and red onion to potatoes .
- Drizzle salad with lemon vinaigrette and toss to combine.
- Chill for 30 minutes before serving.
