10 Delicious Pescatarian Dinners for Weeknights
Pescatarian diets are full of vegetarian principles with the allowance of fish & seafood as protein. Pescetarians often follow Mediterranean diet principles, resulting in fiber and protein rich meals. It’s a super heart healthy way to eat and a great staple method for a healthy lifestyle. Here’s my top 10 favorite pescatarian recipes!

When I put this list together, I wanted to include recipes that featured were a little unique. Not just the typical salmon dinner, but recipes that used fish in super satisfying, and different ways. The poke recipe below is so good, and I also included a few recipes that use leftover salmon for easy lunches the next day. Hope you enjoy these easy pescatarian recipes!
Pescatarian Dinner Recipes

Greek Tuna Salad
This easy recipe is simple but the flavor is huge. I love this one for a portable lunch, and it doubles super easily as a make ahead recipe. Full of veggies, protein, feta cheese, and an easy vinaigrette this one is one you’ll make over and over again!

Leftover Salmon Pasta
If you have leftover salmon, this easy meal is for you. It’s rich, full of salmon, and the flavor of the tortellini with the fresh peas is such a good match.

Easy Salmon Patties
Salmon patties are super versatile. You can make this recipe with both canned and fresh salmon. Serve these in a bun, on a lettuce wrap, or simple just eat them on their own. The red bell pepper with the fresh parsley and seasonings give these a winning twist on an old classic.

Orange Ginger Salmon
This is a super simple recipe with loads and loads of flavor. Dinner party material, but simple enough in preparation for a weeknight meal. Orange zest, ginger, sesame and garlic make this one an original family favorite in my house.

Leftover Salmon Salad
Leftover salmon salad is a wonderful problem to have. It goes so well with the fresh cucumbers and avocado. Drenched in a homemade lemon honey vinaigrette, I just love this one!

One of my favorite overlooked fish to cook is swordfish. It’s got a super mild profile that is easily marinated. It is a very meaty fish, and super filling. I love to make a rice bowl with swordfish and steamed broccoli!

Why spend double the price when you can make these right at home? Homemade poke is delicious, filling, and super healthy. It checks all of the boxes for an easy pescatarian meal.

This easy skillet meal is full of flavor. Serve it on its own or over pasta for a restaurant quality meal. The feta cheese makes this one extra delicious!

Seared Ahi
Seared ahi is a restaurant quality recipe that is easily duplicated at home. It cooks up quickly, and you can choose to marinate it, or not! The key to great ahi is using high quality ahi. I buy mine at Sprouts.

Orange Ginger Salmon- My Fave Pescatarian Dinner!
Equipment
- 1 9×13 inch sheet pan
- foil
- nonstick spray
Ingredients
- 1.5 lb salmon filet
Orange Ginger Glaze
- 2 tbsp orange zest
- 1 tbsp orange juice
- 1 tsp garlic (fresh chopped, or garlic in a jar)
- 2 tsp ginger paste
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp honey
- 1 tsp soy sauce
- sesame seeds
Instructions
- Preheat oven to 400 degrees fahrenheit. Line a sheet pan with foil, and spray with nonstick.
- In a small bowl, combine glaze ingredients and whisk with a fork until fully combined. Mixture should resemble consistency of icing/glaze.
- Place salmon on foil lined sheet pan. Cover with glaze and spread completely over fish.
- Bake for 15-20 minutes, or until interior of salmon reaches temperature of at least 145 degrees fahrenheit. Allow to rest for 5 minutes before serving. Enjoy!
