Leftover Salmon Salad

Ever find yourself with leftover salmon? This Leftover Salmon Salad is the perfect recipe! It’s full of crisp cucumbers, avocado, green onion, and flakey rich salmon. Dress it up in a homemade honey lemon vinaigrette and you have yourself a winner for lunch or dinner!

Salmon Salad Recipe

Salmon Salad is just like chicken salad, and tuna salad. The only difference with this recipe is we use a vinaigrette versus a creamy mayonnaise based dressing. I find that the salmon is so rich, it really just needs some bright flavor to make the salmon salad the most flavorful.

The key to this recipe is using cold, leftover salmon. You don’t need much, a filet or two depending on how much salmon you like in your salad. The beauty of this recipe is even if you only have a little bit of leftover salmon, you can add a ton of vegetables to supplement!

Ingredients to Make Leftover Salmon Salad

This is a great recipe to clean out your fridge with. I’ll share what ingredients I used and also give some suggestions. The possibilities of this one are really endless. It’s such a great recipe because it’s so healthy and versatile!

Ingredients:

  • Leftover Salmon: I used leftover Atlantic salmon. I had about 6 ounces and that was perfect for my husband and I (with leftovers). You could used canned salmon as well.
  • Cucumbers: Persian cucumbers are my favorite! Easy to slice and less waste.
  • Avocado: I’m fortunate enough to live in SoCal where we have great avocados. I used 1 giant haas avocado cut into chunks.
  • Green Onion: I like using green onions because they’re so mild. You could also use red onion if you want more zesty onion flavor and crunch.
  • Honey Lemon Vinaigrette: My go to dressing! I added some dill as well because dill and salmon is such a great combo.

Easy Leftover Salmon Recipe

This is a super easy recipe to make.

  • Chop the cucumbers, green onions and avocado (here’s a great guide on how to chop an avocado easily).
  • Flake salmon with a fork.
  • Add ingredients to a bowl. Gently toss with lemon honey vinaigrette. Serve & enjoy!

Tips & Variations of Salmon Salad

  • Use whatever vegetables you have on hand! Shredded carrots, peas, broccoli, cauliflower, even radishes would be delicious additions.
  • Add fresh garden herbs: Dill and salmon are a classic flavor combination. Parlsey is also great.
  • If you don’t have leftover salmon, canned salmon is a welcome addition.

Storing & Serving Seafood Salad

  • You can store this for up to 2 days in the refrigerator (assuming you are using fresh fish!).
  • Store in a container with a lid in the refrigerator.
  • I love this served with club crackers, but it’s great as an open face sandwich on toasted bread, or just as as simple sandwich as well!

Leftover Salmon Salad

A delicious and easy cold salad featuring rich salmon flakes & crisp vegetables tossed in a tangy lemon vinaigrette.

Ingredients
 

  • 6 oz leftover salmon (flaked with a fork)
  • 3/4 cup cucumber (diced)
  • 1/4 cup green onion (sliced)
  • 1 avocado (diced)
  • 1/4 cup lemon honey vinaigrette
  • 1 tbsp fresh dill
  • salt/pepper to taste

Instructions
 

  • In a medium sized bowl, combine flaked salmon, cucumbers, green onion, and avocado. Set aside.
  • Mix together lemon honey vinaigrette. Add fresh dill.
  • Toss ingredients with lemon honey vinaigrette, and serve immediately.
  • Store in an airtight container with a lid in the refrigerator for up to 2 days.
